OUR MISSION
Wild Bird Dining aims to take the best locally sourced ingredients from Denmark and combine them with the unique flavours of the native Australia. You will be introduced to ingredients that indigenous Australians have been sourcing from some of Australia's most amazing regions.
Wild bird dining would like to acknowledge and pay respect to the traditional custodians of this land, of elders past and present.
ABOUT JOEL BIRD
MEET THE CHEF
With Wild Bird Dining I get to share my passion for the unique flavours of native Australia combined with the modern Nordic style cooking. My main motivation is to provide a unique intimate experience where you in a relaxed environment can sit back and enjoy the fascinating flavours of native Australia. the excitement of combining Australian native with local Danish ingredients with a Nordic style is what motivated me to create Wild bird dining.
Growing up in the tropical north Queensland, I was introduced to these unique flavours from an early age and now after 28 years of working as a chef in some of Australia's top hotels, 15 years as private chef for the British embassy Copenhagen and teaching Australian Native cooking courses at Meyers Madhus in Copenhagen the time just felt right to create Wild Bird Dining.
